Mediterranean Roast Goat

  • 1 Roast leg goat (or shoulder)
  • 2-3 cloves garlic
  • 3-4 sprigs rosemary
  • Juice from 1 lemon
  • Salt and pepper to taste
  • ¼ cup olive oil
  • Fresh or dried oregano
  • 1 cup white wine

Make small incisions to the meat and put a small piece of garlic and rosemary in each. Add the wine and lemon juice drizzle with olive oil and sprinkle with oregano. Season the meat well with salt and pepper. Wrap well with foil and bake for 2 hours.

*Optional add potatoes half way through and serve with steam greens.
